This incredible, gluten free, vegan loaf boosts nutrition with a seed crust and topped with caramelised apple. Say no more!
Chia Egg
1 - Soak 20gms chia seeds with 150mls water
2- Leave overnight if possible or until jelly not crunchy
Apple Strudel Loaf
1 - Preheat the oven to 160 degrees.
2 - Place the almond meal, banana, baking powder, cinnamon, nutmeg, eggs, coyo, oil, apple and flour in a large bowl or food processor and mix to combine.
3 - Pour into a greased loaf tin lined with non-stick baking paper.
4 - Stir the seeded topping and top the loaf, gently pushing it in to secure.
5 - Bake for 1h 20min or until cooked when tested with a skewer.
6 - Set aside to cool slightly before removing from the tin.
Warm Caramelised Apple:
1 - Add coconut oil to a non sticky pan.
2 - Heat the oil
3 - Add apple followed by the rest of the ingredients.
4 - Cook until apple start caramelising and soften up.
Serve with coconut yoghurt and caramelised apple.
