Ingredients
 Corn Tortilla's * preservative free
 8 Eggs
 4 Milk
  cup Grated Cheese
 Lime slices to serve
Avocado Salsa
 1 avocado, diced finely
 2 ripe red tomatoes, diced finely
 ¼ bunch coriander
 ¼ red onion, finely sliced
Chilli Bean Mix
 1 red onion, diced finely
 2 tbsp olive oil
 1 can organic canned diced tomatoes
 1 tbsp cumin
 2 cloves garlic
 1 tsp paprika
 1 can, organic mixed beans
 salt + pepper to season
Method
1

Chilli Beans

1- Sweat onions & garlic in oil on medium heat
2- Add herbs & spices
3- Add tomatoes & simmer
4- When soft add beans
5- Check seasoning, season + set aside

Salsa

1 - Combine all ingredients in bowl + set aside

Eggs

1 - Heat pan on low heat
2 - Mix eggs, milk, salt + pepper
3 - Add a tbsp butter to pan
4 - Add eggs to pan, fold over when slightly cooked.

To Serve

1 - Heat tortillas in oven
2 - Place on a plate
3 - Top with egg mixture, chilli beans, salsa + a wedge of lime
4 - Season with coriander sprigs
